Avoiding food waste in the kitchen

We are very aware that we all need to make big changes to help the planet.  And wasting food whilst others don't have enough to eat is criminal.

Apparently, the average family throws away £700 of food a year.  That is £12 billion of food every year in the UK.    That wastes money, the heat, water and resources that produced it, and the food.

So we are taking the following steps to try and help Earth just a little bit.   And we are thinking of other things we might do all the time.

Strict menu planning and portion control.  We look at what is left over, and plan our menus accordingly

An understanding that 'best before' is not the same as 'use by' so that we don't throw away food when it can be used.

Being friends with wonky fruit and veg and building menus using food that is in season

Embracing the left overs and making them into other delicious items.

Batch cooking - so we use that hour in the oven to make as many items as we can, and then freeze them.

'Culture brings knowledge.  Knowledge leads to consciousness.  And when we become conscious we are one short step away from becoming socially responsible.  Culture is the key'

Massimo Bottura, Chef and Founder of Food for Soul
